Wild garlic soup

Wild garlic is a wonderful ingredient that is both delicious and healthy. It belongs to the allium family and grows mainly in damp forests and along riverbanks. And if I don’t have any potatoes at home, I use 1 teaspoon of locust bean gum to bind the potatoes, mix it with a little cold water and stir it into the soup. Instead of whipped cream, I use crème fraîche, which makes the soup creamier.

1 potato

400 g wild garlic

1 tbsp olive oil

2 onions

1 clove of garlic

1.5 l vegetable stock

60 ml whipping cream







  1. For the wild garlic soup, cut the potato into cubes, finely chop the onion and garlic and sauté in oil.
  2. Add the vegetable stock and simmer for 10 minutes.
  3. Roughly chop the wild garlic and add to the boiling soup, cook for 2-3 minutes.
  4. Puree with a hand blender or Thermomix.
  5. Add the whipped cream.
  6. I like to add a spoonful of sour cream or cream cheese to the soup, these flavours go wonderfully with the spicy wild garlic.

However, there are other ways to store the medicinal plant all year round: First of all, it is possible to freeze wild garlic. To do this, the leaves are washed, dried and chopped. They are then placed in a freezer bag or similar container for freezing. Another possibility is to process wild garlic with olive oil.
