Vegetable Casserole with Mascarpone
A quick and easy vegetable casserole. I always prepare this dish with different vegetables – depending on which one I still have at home. It’s a perfect leftover dish. The leaves of the cauliflower and the stalk are also cut and processed in accordance with zero waste.

INGREDIENTS
800 g vegetables (cauliflower, paprika, zucchhini)
250 g mascarpone
4 eggs
600 g grated cheese
Parsley, fresh
olive oil
salt
pepper
PREPARATION
- For the sauce, mix the mascarpone with 500 g of cheese, eggs and spices.
- Clean the vegetables and cut into small pieces.
- Briefly cook the chopped cauliflower in salted water for about 5 minutes.
- Put some olive oil in the baking dish and layer the vegetables.
- Pour the sauce over and bake at 200 ° C for about 30 minutes.
