Pumpkin Seed Bread

As a Styrian, I finally had to bake a ketogenic pumpkin seed bread. Nothing is better than Styrian pumpkin seeds.

INGREDIENTS

 

100 g golden flaxseed flour

50 g of potato fibers

50 g psyllium husk powder

30 g coconut flour

4 eggs

15 g baking powder

250 g of quark

50 g pumpkin seeds

10 g sesame

1 teaspoon bread spice

1 teaspoon of chia seeds

50 g of crushed linseeds

250 ml of warm water

1 1/2 teaspoons salt

potato fibers & pumpkin seeds

 

PREPARATION

 

  1. Mix the eggs well with the curd.
  2. In the meantime, mix all dry ingredients and add to the eggs.
  3. Once everything is mixed properly, add water and salt. Mix again and let it sit for 10 minutes.
  4. Preheat the oven to 180 C.
  5. Take some of the potato fibers and pumpkin seeds and cover the top of the bread with it. This gives the bread its natural appearance after baking. Put it in the oven and bake for 90 minutes.
