Light Broccoli Soup

As delicious as the beautiful broccoli florets are – what to do with the stems and the stalk? Quite simply: a delicious Light Broccoli Soup! Zero waste is hot!

INGREDIENTS

 

2 stems of broccoli

1 small onion

2 tbsp butter

500 ml vegetable stock

Optional cream (vegans just leave this out, the soup is still delicious)

Salt pepper

 

PREPARATION

 

  1. Peel the onion and cut into small pieces.
  2. Cut the broccoli stems or stems into small pieces.
  3. Heat the butter in a saucepan, fry the onion until translucent and add the broccoli and fry for a short time.
  4. Pour in the vegetable stock, switch to medium heat so that the soup only simmered gently. Let simmer for 10 minutes.
  5. Now either puree the soup in a Thermomix (www.vorwerk.com) or puree with a hand blender and then strain the soup through a sieve so that no hard pieces remain in the cream soup.
  6. Then, depending on your taste, refine with cream and season with salt and pepper.
