Preparation time: 60 minutes
Baking time: 32 minutes
Difficulty:

Ingredients

1 cup flour

1 cup cocoa

1 pkg baking powder

1 cup oil

1 cup sugar

3 eggs

1 cup grated nuts

1 cup sour cream

Grape jelly or jam to taste

Ingredients for the gluten-free alternative

Replace 1 cup of flour with:

½ cup rice flour

½ cup almond flour

2 tbsp locust bean gum

Be sure to reduce the amount of oil to ¾ cup, as the almond flour brings a strong fat content.

Ingredients for the Crumble, gluten-free

80 g rice flour

60 g ground almonds or other nuts

40 g coconut blossom sugar or brown sugar

28 g oil

40 g maple syrup or other liquid sweetener

2 tsp cinnamon

¼ tsp sea salt

Preparation

  1. You do not need a scale for a cup cake. All ingredient quantities are measured with a cup. In this recipe, an empty sour cream cup is used as a measure for the ingredients.
  2. For the chocolate mug cake, first preheat the oven to 180°C (upper-lower heat).
  3. Then mix the flour with the baking powder.
  4. Then mix all the ingredients in a mixing bowl with a wooden spoon.
  5. Spread the dough on a baking tray lined with baking paper and bake for 12 minutes at 180 degrees.
  6. In the meantime, prepare the crumble by mixing all the ingredients together and crumbling. The crumble is easier to make if the butter is ice cold and has already been cut into small pieces with a knife.
  7. Remove the cake from the oven after 12 minutes and carefully spread with the well-mixed grape jelly. Sprinkle with the crumble.
  8. Bake the cake at 180°C for about 20 minutes.
  9. When the cake has cooled, sprinkle with icing sugar.
