Cauliflower, also still known as cauliflower (especially in Austria and southern Germany), or as cheese cabbage (in some parts of Germany), is one of my favourite vegetables for a reason. It’s a healthy and nutrient-rich option that also tastes delicious. Cauliflower is rich in fibre, vitamins and minerals while containing very few carbohydrates, making it a perfect choice for the ketogenic diet. Try this recipe and enjoy the creamy texture and delicate flavour of cauliflower.
Cauliflower puree
Ingredients
300 g cauliflower
90 g cream cheese, double cream
15 g butter
salt, pepper, nutmeg
Preparation
- Boil the cauliflower florets in salted water for approx. 10-15 minutes.
- Puree the cauliflower. I use my Thermomix for this, but of course a hand blender is also good.
- Then I add cream cheese, butter, salt, pepper and nutmeg in a saucepan over low heat.
