Bread Stuffing

Bread roll stuffing, also known as “stuffing”, has a long history and was already used by the ancient Romans. They often stuffed their birds with bread and spices, much like we do today.

Thanksgiving tradition: In the USA, bread stuffing is an indispensable side dish for Thanksgiving dinner. Some people claim that it is even more important than the turkey itself! There are countless variations of bread stuffing around the world. Some use different types of bread like cornbread or white bread, while others add regional ingredients like oysters or chorizo. A filling made from pretzels is also a great alternative. Bread stuffing is often flavoured with a variety of spices, including sage, thyme, rosemary and parsley. These herbs give the stuffing its characteristic flavour. Bread stuffing is not just for meat lovers. There are also delicious vegetarian versions that use vegetables, nuts and broth to create a rich filling. Many cooks love to experiment with their bread roll fillings. They can add dried fruit, mushrooms, apples or even cheese to create a unique flavour combination.

Bread filling is often associated with festive occasions and family gatherings. It symbolises warmth, hospitality and shared food. Many families have their own traditional recipes for bread stuffing that are passed down from generation to generation. These recipes may contain regional specialities and secret ingredients.

Bread filling is also a great way to use leftover bread and rolls. The filling can be used to stuff a chicken, for example, but is also ideal for baking out in a tin in the oven to create your own side dish.

Preparation time: 15 minutes




3 pcs stale bread rolls

1 onion

1 handful parsley

1 tsp salt

1 tsp pepper

1 tsp marjoram

2 eggs

180 ml milk




  1. Cut the stale bread into cubes.
  2. Finely chop the onion and sauté in olive oil.
  3. Finely chop the parsley.
  4. Mix all the ingredients together in a bowl and leave to rest for 15 minutes.

Variation 1: for stuffing

Now stuff the poultry or roast with the stuffing and continue with the recipe.

Variation 2: as a side dish

Brush a casserole dish with oil and fill with the bread stuffing. Then roast in a preheated oven for approx. 30-35 min. at 180°.
